Tie Guan Yin - Medium Oxidisation (2009)

Tie Guan Yin - Medium Oxidisation (2009)

Medium oxidised, traditional produced Tie Guan Yin from An Xi, Fujian. Specially commissioned by Wan Ling for her Chinese customers. We are pleased to offer this great tea to our worldwide customers.

Great tasting tea with a good depth.

This tea is ageing well. There is an depth to this tea now (spring 2016) and the tea liquor feels thicker with a longer lasting sweetness in the finish.

Pecans and Marzipan...

Drinking this as I type. Using 12g in my 120ml Taiwan red clay shui ping, which tends soften and round off the flavour, increasing the body while reducing the aftertaste somewhat. Highland Spring water at 100c and flash infusions. Brewing this tea in this style, it is pure and sweet, elegant and humble. The flavour profile, to my palette, is pecans and marzipan. Medium body, medium aftertaste. The first two infusions, after rinsing, are very clean. It develops a fleeting sourness in the middle with subsequent infusions. This sourness is not unpleasant and, by contrasting the sweetness, only serves to emphasise it. It can be brewed and enjoyed indefinitely.
