Bai Mu Dan or Pai Mu Tan is a classic white tea from FuDing in FuJian province.

Our 2004 Bai Mu Dan aged white tea has been so popular, including picking up an award at the Great Taste, we have been keen to find some other great examples. During our 2016 Fuding sourcing trip we made some new connections, including the grower of this excellent organically grown white tea. The loose white tea has been stored in the farmers warehouse and was pressed into 357g cakes in 2013.

If you haven't tried aged white tea, you should! The ageing process combines the delicate notes of fresh white tea with a smooth yet full, complex body. The taste is complemented by a clear, bright liquor and enchanting aromas.

Ideal to drink now or for further ageing.

Basic Brewing Information

Unlike, Bai Hao Yin Zhen and other pure tip teas, BaiMuDan white tea, especially aged white tea, should prepared with near boiling water. For best results brew with a GaiWan.

Tea Tasting Notes

Tea Appearance: Mix of large leaf and fine white/silver tips.

Tea Liquor: This white tea liquor goes through a spectrum of colours during it's many brews. Starting a warm golden colour, by the 3rd and 4th infusions it is a dark red-amber, latter infusions the tea returns to it's warm golden colour. Throughout the tea is clear and bright.

Tea Aroma: Complex and multi-layered. Sweet, with hints of honey, Chinese medicine, flowers and sometimes a hint of soft dark sugar.

Tea Taste: The aromas of this tea share striking similarities with the taste. A multi-layered experience, which has an unparalleled ability to balance delicate and light with depth and lingering flavours. Has to be tried to be believed.

Tea Facts and Tea Region Information

Fuding

'Eastern (Fujian)-style' white teas are cultivated closer to the sea, amidst a mountain chain, which surrounds the town of Fuding on its northern, southern and western sides, to the east the land drops to sea level, creating a distinctive, horseshoe-shaped landscape. Fuding experiences a mild, wetter maritime-influenced climate, with a less extreme temperature range than some inland white tea production areas such as ZhengHe.

White Tea

White tea production process is the simplest of all teas and although white tea does undergo oxidisation unlike green tea. However the process does not include any rolling nor, traditionally a final drying 'bake' to halt the oxidisation process.

The key steps include; 

Wei Tiao 萎凋 - Withering

Shai Qing 晒青 - Sun drying

Hong Bei 烘焙 - Finishing bake (low temperature)
