Dark Oolong tea. Our 2016 spring harvest Que She 雀舌 'Sparrow Tongue', gets it's name from the serrated edges of the tea leaf, which in the past was thought to look similar.

 

This rock oolong tea is well balanced, combining good aroma with a complex, mineral flavour that has a medium bake.

Basic Brewing Information

Vessel Capacity: 150ml tea mug or glass
Tea Quantity: 2 - 3g (loose leaf)

Tea Tasting Notes

Tea Appearance: Dark, long leaf with hints of red at the edges. Medium oxidisation >50% and a medium bake.

Tea Liquor: Bright, clear, golden liquor.

Tea Aroma: Particularly when preparing in a GaiWan the aroma has a both floral and mineral notes, whilst still maintaining that satisfying comforting essence which characterises great WuYi Shan teas.

Tea Taste: Soft and smooth Oolong. Flavours emerge, from initial sweetness on the tip of the tongue, through a well balanced astringency as the liquor runs over your palate to a long silky finish.
