The ZhengChao u style varies slightly from other QingXiang Tie Guan Yin teas in the collection. The tea receives a final heating, ceasing the oxidisation process on the 2nd day morning after picking the leaves. The processing leaves the leaf around 50% fermented/oxidised, a little longer than some, thereby creating a softer, longer finish. For some this this type of processing is closer to some of the more traditional style Tie Guan Yin Oolong teas available.

Basic Brewing Information

Instructions: Rinse the tea with a little hot water and then discard it. Next refill the tea pot and follow the infusion times below. For a 120ml Gai Wan you can either keep back 1-2g or add all the leaf. If you add all the leaf, you may want to revise the brewing times slightly (downward) to allow for the fuller flavour. Please note using a Zi Sha teapot times should be revised downward to allow for time for the liquor to pour from the tea pot.
