Tasting Notes: Tie Guan Yin, Jasmine & Darjeeling

Via the power of the internet we met Janey Ditter. Janey had just finishing studying tea in India. We invited Janey to sample some of our teas. Here are Janey's tasting notes. Enjoy!

Tea Tasting notes for Wan Ling Tea House

I'm going to taste 6 tea samples from Wan Ling Tea House, from which 6 are of Chinese origin :

1. Jiu Jiu Jiu (Tie Quan Yin) - Oolong, harvested spring 2012
2. Zheng Chao (Tie Quan Yin) - Oolong, harvested may 2012
3. Long Jing - Green tea, harvested 2014
4. Jasmine AA (Dragon Pearls) - Green flavoured, Fujian, harvested spring 2013
5. Zheng Wei (Tie Quan Yin) - Oolong, harvested may 2012

And one is of Indian origin:
6. 1st flush Darjeeling - black tea, harvested 2014

For my tea tasting I used professional TEA TASTING cup and bowl and additionally tried them in Gaiwan. The time of brewing was exactly 5 minutes for each sample and the water temperature was exactly 80C and quantity of tea per cup was approx. 3-5g. In my pointing system I evaluate the quality of aroma, body and after-taste along with examination of leaves (dry as wet), liquor.


My chart is simple:
0 - excellent
1 - very good
2 - good
3 - medium
4 - bad
5 - very bad
6 - awful

1. Jiu Jiu Jiu (Tie Quan Yin) - Oolong, harvested spring 2012

My first tea I tasted was Jiu Jiu Jiu, because of the bright yellow package and wonderful name, this tea was unknown to me so I was very curious about it's taste. When I opened the package the whizz of orange blossom with malty earth entangled me. After pouring the tea in ceramics tea measuring bowl I realise it's an oolong. 

Tightly twisted bright yellowy green parts melting with dark shades of green which can only be compared to a swamp... Tie Guan Yin. After sniffing out the contains of the bag, I got the image of fresh squeezed orange juice mixed together with geranium plants while you sitting on wet spring ground.

LEAF APPEARANCE:
- colour: light yellow parts between dark green
- aroma: orange, geranium, slightly smoky eartly notes
- size & shape: small leaf, partly twisted - touch: ok but not too crunchy

INFUSED LEAF:
- aroma: orange blossom, vanilla, geranium
- colour & appearance: dark green with pieces of brownish colour (I think bit more dried than it should be)

LIQUORE:
- colour: nice shade of yellow, bright and clean
- aroma: mellow flowers
- body: mild, light
- taste: sweet, orange blossom (dominant)
- after-taste: orange blossom, parsley, green fresh grass
- astringency: no astringency, pretty mellow

2. Zheng Chao (Tie Quan Yin) - Oolong, harvested May 2012

My second tea I tasted was Zheng Chao. This one on the other hand smelled more like citrus zest than orange blossom and bit more herb like.

LEAF APPEARANCE:
- colour: light green shades melting with dark swampy green
- aroma: flowery
- size & shape: small leaves partly twisted
- touch: bit harder

INFUSED LEAF:
- aroma: sweet, citrus zest, thyme
- colour & appearance: dark green

LIQUORE:
- colour: greeny light yellow
- aroma: sweet citrus
- body: light
- taste: light and lemony, very soft
- after-taste: not much
- astringency: no

3. Long Jing - Green tea, harvested 2014

My third tea was Long Jing.... I love Long Jing....it's one of my absolutely favourite teas ever, it was in fact my first tea I ever tasted in loose form. I usually buy the toppest class of Long Jing, so my expectation on this sample will be quite high and my judgement may be a bit overshadowed by my obsession in buying great quality only :o]

Harvested / Grade: 2014

LEAF APPEARANCE:
- colour: 3 shades of green turning towards brown
- aroma: chestnuts, hazelnuts, roasted
- size & shape: flat swords or copies like, beautiful bud and leaves
- touch: fresh, light but looking bit too dried

INFUSED LEAF:
- aroma: chestnuts, grass, malt
- colour & appearance: light green, bit broken on pieces not identical

LIQUORE:
- colour: bright yellow, clean
- aroma: strong nutty
- body: light, with heavy dryness :]
- taste: nutty, sweet, grassy (not unpleasant)
- after-taste: chestnut, hazelnut, ginseng
- astringency: pleasant undertone

CHART: 2 - Good

4. Jasmine AA (Dragon Pearls) - Green flavoured, Fujian, harvested spring 2013

My forth tea was Jasmine AA which turns out to be in a rolled ball shape as dragon pearls usually are, so I presume it's gonna be that. It smelled wonderfully, very pleasant jasmine smell, no grassy nor too perfumy, just the right amount! Like a sitting in garden on beautiful sunny day with bit of fresh breeze flying around you... bringing the whizz of nearby jasmine plant under your nose...

LEAF APPEARANCE:
- colour: beautiful matte green with white fluffy tips melting like a rainbow
- aroma: jasmine (clear), rose, minty touch
- size & shape: rolled balls, perfect, beautiful tips
- touch: crunchy, perfect INFUSED LEAF: - aroma: pure jasmine, mellow, sweet, cooling
- colour & appearance: light matte green, fluffy, perfect

LIQUORE:
- colour: soft yellow almost like white tea, clean
- aroma: jasmine, rose, geranium
- body: light, sweet - taste: jasmine
- aftertaste: jasmine lingering
- astringency: not much, very soft and beautiful tea

5. Zheng Wei (Tie Quan Yin) - Oolong, harvested May 2012


My fifth tea was Zheng Wei, which I haven't tried before either, another oolong.

Origin: China
Harvested/ Grade: 2012 May

LEAF APPEARANCE:
- colour: Light and dark oolongy type
- aroma: a bit hay like, bold
- size & shape: twisted but uneven
- touch: no crunchy, harder

INFUSED LEAF:
- aroma: orange, flowers, cream, metallic - iron like
- colour & appearance: dark green, swampy, one colour like

LIQUORE:
- colour: pale yellow
- aroma: metallic, flowery
- body: light
- taste: parsley, grassy
- after-taste: grassy and salty
- astringency: no

6. 1st flush Darjeeling - Black tea, harvested 2014

My last sample was from Darjeeling India. It has classical Darjeeling aroma... like a wet ground after rain..... mixed with dust and earth. Sipping this tea is like a boom of colours, aromas and heat. The Darjeeling's are always very powerful teas, the amount of caffeine is high, they are strong, sharp and bold... just the right cup for morning :o]

- aroma: dusty, earthy, wet
- size & shape: broken
- touch: crunchy, fresh INFUSED LEAF:
- aroma: bark and wet earth like
- colour & appearance: dark green and brown with couple of spots (tea mosquito)

LIQUORE:
- colour: dark yellow to orange
- aroma: bit of wet earth and salt
- body: medium
- taste: metallic, salty, ocean air
- after-taste: grassy (ok)
- astringency: yes medium strong
